Phew, it's been a hell of a month. October flew by and my mind has been everywhere except for on the blog (unfortunately). I apologize for that, but on the bright side, my schedule is opening up so I should be able to post more! For now, I wanted to share a recipe for an Apple Torte. I actually made this cake several weeks ago with my sister and her husband, and like a true slacker haven't gotten it online yet! This recipe is still a great seasonal dessert, and should be on everyone's tables this fall! Enjoy, and I will see you next week for some more seasonal Italian recipes!
Unfortunately, I don't have a picture this time. We took one of Ryan's phone, the memory card of which took an unfortunate fall down the sink. Ryan's response: "Oops...sorry. I guess we'll just have to make another one!" So supportive, that one.
Apple Torte
Adapted from Angela's Food Love
Ingredients:
4 small Granny Smith apples
1 teaspoon lemon juice
2 eggs
1/2 cup vegetable oil
3/4 cup sugar
1 cup flour
2 tablespoons amaretto liquor
1 teaspoon baking powder
Optional: cimmanon and sugar or powdered sugar for topping
Procedure:
- Preheat the oven to 325 degrees.
- Peel and core the apples. Cut into slices about 1/4 inch thick. Toss the apples with the lemon juice and set aside.
- Combine the remaining ingredients into a bowl. Stir until smooth. Batter will be thick.
- Grease a 9 inch round pan (or a 9 inch springform pan) with butter and sprinkle with flour.
- Pour the cake batter into the pan.
- Layer the apple slices in top of the batter, forming a spiral design as you go. Push down on the slices slightly.
- Bake for 60 minutes. Top with cinnamon and sugar mixture or powdered sugar to serve.
